Innovation within the world of cider is not just about looking for new types of cider; It is also to work on the improvement of the oenological characteristics of the ciders that had already been done, as in the case of the new production of cider 1947, of the llagar Viuda de Angelón, aged in oak casks.

DONATO X. VILLORIA.-. When we talk about innovation in the world of cider, we understand that we are talking about starting to make new types of cider. But everything is not like that; A very good example of innovation in cider is the work of some cidermakers with their most famous ciders.

In this sense, some cider mills of which we have been speaking in recent years are widely known, in which work is being done on the development of new products within the Asturian market, but there were very few who put the effort into bringing the experiences of the wine world to the cider world.
